Lemon Loaf

INGREDIENTS:

  • Loaf
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 2 eggs
  • grated rind of one lemon
  • 1 ½ cups flour
  • 1 teaspoon baking powder
  • ⅛ teaspoon salt
  • ⅔ cup milk
  • Topping
  • ¼ cup honey
  • ⅓ cup granulated sugar
  • ¼ cup lemon juice
  • lemon slices

DIRECTIONS:

  1. Beat the butter, in a large bowl, gradually adding the sugar.
  2. While beating, add the eggs one at a time, then add the lemon rind.
  3. Sift together the flour, salt and baking powder and add to the bowl, alternating with the milk.
  4. Pour the mixture into a greased loaf pan and bake in the oven at 340 degrees for 1 hour
  5. Mix together the topping ingredients and heat until warm. Pierce the cake thoroughly while warm and pour topping over the top.
  6. When cool, decorate the cake with thinly cut lemon slices.
