Chocolate Crinkles
These chocolate crinkle cookies are soft, cake-like, and packed with rich cocoa flavor. You only need pantry staples plus cocoa, making this a straightforward option for holiday baking.

INGREDIENTS:
- Wet Ingredients
- 1/4 cup vegetable oil (corn, grapeseed or safflower)
- 4 ounces melted unsweetened chocolate
- 1 cups granulated sugar
- 4 eggs
- 2 teaspoons vanilla extract
- Dry Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup Icing sugar to roll the cookies in
DIRECTIONS:
- In a large bowl stir together the oil and sugar. Add the melted chocolate to this mixture. Add the vanilla and then the eggs, one at a time.
- In another bowl mix the dry ingredients except for the icing sugar.
- Gradually add the dry ingredients into the chocolate mixture.
- Cover and chill in the fridge overnight.
- Heat the oven to 350 degrees F. Put the icing sugar into a bowl.
- Scoop out teaspoons of dough into the icing sugar. Roll in the sugar; shape into balls. Place about 2 inches (5 cm) apart on parchment covered cookie sheets. Rinse hands often during this procedure as it is very messy.
- Bake for 10 to 12 minutes, no more!
