Chocolate Crinkles

These chocolate crinkle cookies are soft, cake-like, and packed with rich cocoa flavor. You only need pantry staples plus cocoa, making this a straightforward option for holiday baking.

INGREDIENTS:

  • Wet Ingredients
  • 1/4 cup vegetable oil (corn, grapeseed or safflower)
  • 4 ounces melted unsweetened chocolate
  • 1 cups granulated sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • Dry Ingredients
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup Icing sugar to roll the cookies in

DIRECTIONS:

  1. In a large bowl stir together the oil and sugar. Add the melted chocolate to this mixture. Add the vanilla and then the eggs, one at a time.
  2. In another bowl mix the dry ingredients except for the icing sugar.
  3. Gradually add the dry ingredients into the chocolate mixture.
  4. Cover and chill in the fridge overnight.
  5. Heat the oven to 350 degrees F. Put the icing sugar into a bowl.
  6. Scoop out teaspoons of dough into the icing sugar. Roll in the sugar; shape into balls. Place about 2 inches (5 cm) apart on parchment covered cookie sheets. Rinse hands often during this procedure as it is very messy.
  7. Bake for 10 to 12 minutes, no more!
